Today, on the first day of the Chhattisgarh Millet Carnival, Netaji Subhash Stadium in the capital Raipur was filled with the aroma of delicious dishes of millets. Here India’s renowned chef Gunjan Goela taught and fed the audience delicious dishes of millet full of taste and health. He fed bajra, peas and mint soup, bajra khichdi and bajra roti with jaggery churma. After tasting the dishes of millets, people came to know that the treasure of taste and health is also hidden in bajra soup, roti and khichdi. Meanwhile, Chef Gunjan Goela also answered people’s queries and cleared their doubts regarding Millet.

Chef Gunjan Goela said that India has a rich culinary culture. On which the young generation needs to do research. Millets have been our ancient food, which we can adopt again and make India rich with the super food of the future. With this we can help the farmers along with our health. Millets are nutritious and grow quickly. He said that before eating it one should know why and how to eat millets. He told that millets have high fiber and nutrients. That’s why more water should be used in cooking them. If you gradually include millets in your food, then at one time millets will be included in 80 percent of the food. It is very beneficial for diabetics and heart patients because its glycemic index remains low and it contains less starch.

Answering the questions of the audience, he told that kidney patients can eat kodo, sava, less ghee is used in its preparation. He told that good dosa can be made from sava. Bhelpuri can be made of puff millets. Pancakes, shakes and cakes can also be made from millets.

It is noteworthy that a three-day millet carnival is being organized under the joint aegis of Chhattisgarh State Minor Forest Produce Association and IIMR Hyderabad. A Millet Food Court has also been set up in this unique carnival where citizens can relish the delicious dishes of Millet. The purpose of the Millet Carnival is to include millet in the daily diet of the people and to create awareness about its nutritional value.
